Strawberry milk for life
In our house, strawberry milk is the superior milk flavor.
I was sitting down dreaming up recipe ideas and my oldest daughter asked for strawberry milk. Instantly, I thought “Yes! That would be a great cookie” I went to work.
I tested this recipe quite a few times. The first few tasted more like you walked the cookie through an IDEA of strawberry milk.
Strawberry Milk Cookies
Remember those failed attempts? Well one thing about me, I don’t give up.
I kept trying until they tasted exactly like strawberry milk.
Equipment Needed
Baking sheet – a light colored baking sheet is essential, especially for a lighter colored cookie. This one from Nordic Ware is my favorite for even baking.
Electric mixer– A stand mixer is always great, but if you don’t have one any electric hand mixer will work. This is the one I use, I think the beaters are the easiest to clean.
Rubber spatula– This one is essential for folding in your sweetened condensed milk. I like a little bit of sturdier spatula that really holds up to the weight of cooking.
Ingredients
Freeze dried strawberries– This really helps kick up the strawberry flavor.
Strawberry milk powder– Could it be strawberry milk cookies without it?
Egg– Any large egg of your preference will work.
Sugar– Granulated white sugar is what’s needed for this recipe. I find its what gives it the crispy crunch instead of the brown sugar chewy.
Flour– All purpose flour of your choosing
Sweetened Condensed Milk– Sweetened condensed milk gives it the creamy, milk flavor paired with the freeze dried strawberries, Yum.
Butter– One stick of room temperature unsalted butter. Make sure you are using butter and not margarine. The milk solids and fats of butter are nessacary.
Specific Ingredients
Sweetened Condensed milk vs Evaporated Milk– This may come as a surprise but they aren’t all that different.
Evaporated milk has a tad bit more liquid and no sugar added.
Sweetened condensed has been heated and all liquid removed and sugar added. Sugar making it thicker in consistency.
Instructions
Preheat your oven to 350° Line cookie sheet with parchment paper.
Put your freeze dried strawberries into an airtight bag, and crush. You want it to be as fine as possible.
Start by creaming your room temperature butter. After your butter is light and fluffy, add one cup of granulated sugar. Mix well.
After that is incorporated, add your egg and one tablespoon of vanilla extract. Mix until egg is full incorporated.
Time to add your dry ingredients. Add your flour, baking soda, baking powder, freeze dried strawberries and strawberry milk powder. Mix well.
Fold in about a 1/3 of a cup of sweetened condensed milk. You don’t want it fully mixed. You want it to be in ribbons across the dough.
Scoop out your dough onto your lined baking tray.
Bake for 12-15 minutes or until edges are slightly hard but top is still spongy.
Once they are done, let them cool for about 10 minutes on baking tray. They will finish cooking from the residual heat.
Make Ahead
Does it freeze? Yes they do! Scoop them out onto a lined baking try, and pop in the freezer. You can place in a freezer bag once frozen.
If you’re baking from frozen add 2 minutes to baking time.
Tips & Tricks
Strawberries turning colors– Use baking powder that’s aluminum free. It can react with the strawberries causing your cookies to turn green or blue.
Storing
Store in an air tight bag for up to 5 days, if they last that long.
